Talk Title: Phenolic Compounds In The Digestive System: Their Potential Beneficial Effects And Interactions With Dietary Fibers
Lidija Jakobek Barron received her BSc and PhD degrees in Biotechnical Sciences from the Faculty of Food Technology, University of Osijek, Croatia. As a post-doc training and a visiting scholar she stayed at CEBAS-CSIC Institute,University of Helsinki, and Yale University.
Her scientific interests are the investigation of the fate of phenolic compounds in the digestive tract, their interactions with other food components especially with dietary fibers, and the influence of these interactions on the beneficial effects of phenolic compounds. She is also interested in modelling experimental data to predict the behavior of phenolic compounds in the digestive system.
